The "Classical Architect" – A Masterpiece of Finesse and Bordeaux-Style Structure
In March 2026, the 1991 Único is widely celebrated for its "serious and classical" profile. While the 1989 was a year of opulent power, the 1991 is often compared to a First Growth Bordeaux (specifically Château Latour) due to its structural precision and "cool" mineral energy. The growing season featured a warm spring but saw significant rain, followed by a harvest in very warm weather starting on September 30th.
The 1991 is technically significant as it marks one of the first years where the estate moved toward a more focused blend of Tempranillo and Cabernet Sauvignon, omitting the Malbec and Merlot that were more common in the 1980s. It was aged for a staggering 16 years in various wood vats and barrels before its initial release, making it one of the most patiently crafted wines in the history of the winery.
🍷 Tasting Notes (2026 Perspective)
At 35 years old, the 1991 has entered its "plateau of perfection." It has shed its youthful austerity and replaced it with a seductive, silky complexity.
-
The Nose: Ethereal and Non-Aggressive. It leads with a sophisticated "Bordeaux-esque" bouquet of blackcurrants, fresh oregano, and paprika. As it breathes, classic secondary and tertiary notes emerge: blond tobacco, cedar wood, and a hint of praline.
-
The Palate: Elegant and Austere. The mouthfeel is medium-to-full-bodied with creamy, "melted" tannins. You’ll find a vibrant core of red and black raspberries balanced by savory notes of grilled meat and anise. The acidity is "shimmering," providing a refreshing lift that makes the wine feel much younger than its age.
-
The Finish: Supple and Seductive. It concludes with a formidable balsamic after-aroma and a lingering trail of crushed minerals and tobacco leaf.

Pro Tip
The 1991 is a "harmonious" vintage that values balance over raw strength. Decant for 60 minutes—unlike the fragile 1987, the 1991 has a "firm frame" and benefits from oxygen to unlock its complex spice and tobacco layers. If drinking from a Magnum, give it 2 hours. Serve at 16°C–17°C.
Its "savory and spicy" profile makes it an ideal partner for Lamb with Ratatouille, Steak Frites, or Venison. In Finland, it is an exceptional match for Reindeer with a dark berry reduction, as the wine's acidity and herbal undertones complement the lean, gamy meat.
