The 1987 vintage was challenging in Ribera del Duero, marked by a rainy harvest that resulted in a lower-yield, more delicate crop. Historically, Pablo Alvarez noted that the wine was "tense and harsh" in its youth, but as of 2026, it has fully relaxed into a harmonious, "aristocratic" state.

Notably, 1987 was one of the last vintages to feature Malbec and Merlot in the blend alongside Cabernet and Tempranillo, before the estate shifted to a more simplified "Tempranillo + Cabernet" focus.

At nearly 40 years old, the 1987 is firmly in its tertiary "glory" phase. It is a wine of nuance rather than brute force.

  • The Nose: Fragrant and Complex. It opens with a sophisticated bouquet of dried roses, chocolate orange, and cloves. As it breathes, classic "Unico" notes of sweet tobacco, cedarwood, and leather emerge, accompanied by a surprising hint of mandarin orange and wild herbs.

  • The Palate: Lacy and Persistent. The entry is surprisingly fresh, driven by a "shimmering" acidity that lifts the red fruit flavors (red cherry preserves and raspberry). The tannins are now completely resolved and silky, feeling like liquid velvet.

The 1987 is a "fragile" Unico compared to the massive 1994 or 2010. Do not decant for hours; a 30-minute "breathing period" in the bottle is often sufficient. If you use a decanter, watch it closely—it can "fade" quickly once it hits peak oxygen. Serve at 16°C in a large Burgundy-style glass to capture the delicate floral aromatics.

Its high acidity and red-fruit profile make it an incredible partner for Roasted Duck with a cherry reduction, Mushroom Risotto, or Lamb Sweetbreads. It is also a rare red that can pair with aged Comté or Nutty hard cheeses.
