In March 2026, the 2019 Grotta del Gelo from Serafica is reaching a beautiful point of maturity. Named after one of Etna’s most famous volcanic ice caves (the "Cave of Frost"), this wine is a tribute to the unique microclimate of the volcano's Southern Slope (Versante Sud). While the Northern slope often gets the most fame, the Southern side—where Serafica’s vineyards sit at a staggering 900 meters above sea level—produces wines with a distinct "luminosity" and a softer, more floral profile.
The 2019 vintage on Etna was exceptional, characterized by a long, balanced growing season that allowed the Nerello grapes to develop deep aromatics without excessive alcohol.
🍷 Tasting Notes (2026 Perspective)
At seven years old, the 2019 has moved past its youthful "crunch" and is now showing the savory, complex "Etna character" that collectors look for.

The Nose: Intense and Earthy. It leads with classic volcanic notes of smoke, graphite, and flint. As it breathes, a bright core of raspberry and wild strawberry emerges, accompanied by sophisticated layers of dried violet, leather, and Mediterranean herbs (thyme and marjoram).

The Palate: Silky and Mineral. The entry is medium-bodied and "transparent." You’ll find a vibrant acidity that carries flavors of sour cherry and pomegranate. The tannins are powdery and fine, characteristic of the 12 months it spent in large French oak barrels.

The Finish: Persistent and Saline. It concludes with a refreshing "vertical" finish, leaving a lingering taste of tobacco leaf and crushed stone.

The Southern slope’s wines are known for being slightly more approachable in their youth than the "tannic giants" of the North, but they still benefit from air. Decant for 45 minutes to let the smoky volcanic notes integrate with the delicate floral aromas. Serve at 16°C–18°C in a large Burgundy-style glass to allow the Nerello Mascalese to "breathe."
Its combination of high acidity and savory depth makes it an incredible partner for mushroom risotto, grilled lamb with rosemary, or pappardelle with wild boar ragu. It also pairs beautifully with aged sheep's milk cheeses (Pecorino Siciliano).
