Senses Day One Pinot Noir is a cool‑climate vineyard wine from the Sonoma Coast, distinguished by its complexity and long ageing potential.
Day One is the founders’ tribute to their first estate vineyard and their original vision to craft the purest and most elegant Pinot Noir from the Sonoma Coast.
Sonoma Coast is one of California’s coolest and most esteemed Pinot Noir regions. Coastal fog and ocean breezes slow ripening and give the wines fresh acidity, floral character, and depth.
The grapes are hand‑harvested, and only perfectly ripe clusters are selected. Fermentation occurs spontaneously with native yeasts, adding aromatic complexity. The wine matures for about ten months in French oak barrels, which contributes structure and a delicate spiciness. The result is an elegant, floral, subtly spicy, and vibrant Pinot Noir red wine.
This wine is enjoyable in its youth but also has cellaring potential for 1–12 years. In classic fashion, it pairs beautifully with game birds, mushroom dishes, rich fish, and lighter meat dishes. For example, roasted duck breast, truffle risotto, smoked salmon, or lamb rack.
