The "Pre-Phylloxera" Ghost – A High-Density Masterpiece of Pure Cabernet Franc

In March 2026, the 2021 Franc de Pied is celebrated as one of Thierry Germain’s most daring "technical" achievements. The name refers to vines planted "on their own roots" (not grafted onto American rootstock), a rarity in Europe since the phylloxera plague of the 19th century.

Planted at an staggering density of 10,000 vines per hectare on a tiny 1.2-hectare plot of deep sand, these vines are so close together they must be worked by horse (Ben and Comtesse) because tractors cannot fit. The 2021 vintage—cooler and more "classic" than the heatwaves of 2018–2020—perfectly suits this cuvée, resulting in a wine of ethereal lightness and "Burgundian" silkiness.


🍷 Tasting Notes (2026 Perspective)

The 2021 is currently in a beautiful, vibrant stage where the "electric" acidity of the vintage meets the naturally soft tannins of ungrafted vines.

  • The Nose: Floral and Fragrant. It opens with a delicate, "airborne" bouquet of violets, peonies, and irises. Unlike standard Cabernet Franc, there is no "green bell pepper" here; instead, you find wild blueberries, raspberries, and a sophisticated hint of anise and rose petals.

  • Palate: Lacy and Precise. The entry is weightless and "ethereal." The texture is often compared to a fine Chambolle-Musigny rather than a traditional Loire red. Expect a core of pure red fruit and pomegranate, balanced by a taut, lively acidity and tannins so fine they feel like satin.

  • The Finish: Long and Sapid. It concludes with a distinct saline and stony mineral trail, a signature of the deep sand-on-limestone terroir.

Pro Tip

This is a "intellectual" wine that relies on aromatics rather than power. Serve it slightly chilled at 14°C–15°C—standard room temperature will mask the delicate violet and iris notes. Decant for 30–45 minutes to let the whole-cluster "spice" integrate with the fruit.

Its refined structure makes it a perfect partner for Veal with morels, Roasted Duck with cherries, or a Seared Tuna steak. It is also one of the rare reds that can handle delicate poultry without overwhelming it.
