In March 2026, the 2019 Passo a Passo Primitivo from Ca' Vescovado is considered a mature and fully-integrated expression of Puglia’s signature grape. Produced by the Casa Vinicola Carlo Botter (CVCB), this wine follows the "Doppio Passo" (double step) philosophy, where a portion of the grapes are harvested at full ripeness and another portion are left on the vine to wither slightly (appassimento), concentrating the sugars and flavors.

The 2019 vintage was a standout for the Salento region, offering a long, warm growing season that allowed the Primitivo grapes to reach peak aromatic complexity.


🍷 Tasting Notes (2026 Perspective)

After seven years, the 2019 vintage has moved past its "primary fruit" stage into a more sophisticated, "savory-sweet" profile.

  • The Nose: Opulent and Ripe. It leads with a powerful hit of blackberry jam, dried plums (prunes), and black cherries. As it breathes, sophisticated layers of vanilla bean, dark chocolate, and a hint of sweet pipe tobacco emerge.

  • The Palate: Dense and Velvety. The entry is broad and "mouth-filling" with a characteristic hint of residual sweetness. You'll find flavors of ripe figs and balsamic notes, balanced by soft, integrated tannins that feel like suede.

  • The Finish: Persistent and Warm. It leaves a long, comforting trail of cinnamon spice and roasted coffee, with a faint "sun-baked earth" minerality.
