Mikulski is iconic for his chalk-written labels, reflecting his minimalist, precise, and terroirdriven approach to winemaking.

The Terroir & Vineyard

  • The Parcel: Les Toisières sits on a southwest-facing slope. Historically, it was an old quarry where flat stones (laves) were extracted for traditional Burgundy roof tiling.

  • Soil Structure: The soil is a classic clay-limestone blend. Because of the shallow limestone rock from the old quarry, the wine regularly showcases a distinctive, driving minerality and fine, structural tannins.

  • Vine Age: The Pinot Noir vines in this parcel were planted in the early 1980s, providing excellent depth and natural balance.

Vinification Style

Mikulski follows non-certified organic viticulture and maintains a hands-off but meticulous cellar philosophy:

  • Grapes are fully de-stemmed.

  • Fermentation occurs with ambient/indigenous yeasts in vats for about 15 days.

  • The wine is aged for approximately 15 to 18 months in French oak barrels, keeping new oak restrained at around 20% to prevent masking the bright fruit and stony character.
