En Ergot is a small and highly regarded vineyard in the village, located in its central section where the soil is limestone with touches of clay. The wine is 100% Pinot Noir.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv class=\"col-12 md:col-6 mb-2\"\u003e\u003cspan class=\"block line-height-4\"\u003eThe harvest is carried out carefully by hand, and fermentation takes place with natural yeasts, highlighting the purity of the site and the wine’s true character. Ponsot uses very little new oak during ageing to preserve the wine’s fruit and freshness.
