Laurent Ponsot is one of Burgundy’s most renowned and respected winemakers, and Clos de Vougeot is a legendary Grand Cru vineyard whose history dates back to the 12th century and the monks of Cîteaux. Cuvée du Cèdre takes its name from the ancient cedar tree at the edge of the vineyard, symbolising the wine’s depth and remarkable longevity.
Clos de Vougeot is one of Burgundy’s largest Grand Cru vineyards, and Ponsot’s plots lie on the highest, stoniest sections of the site, conditions that are exceptionally favourable for the Pinot Noir grape.
The harvest is carried out carefully by hand, and fermentation takes place with natural yeasts, highlighting the purity of the site and the wine’s authentic character. Ponsot uses very little new oak to preserve the wine’s fruit and freshness. Ageing takes place in older French oak barrels for around 18–24 months.
This silky Grand Cru elevates refined dishes: perfect with duck, game birds, truffle and wild mushrooms. Roasted root vegetables and aged cheeses also highlight the wine’s elegance. It matures beautifully in the cellar for decades.
