Laurent Ponsot Beaune 1er Cru "Cuvée du Noyer" 2017
The Debut Vintage – A Harmonious, Savory Mosaic in Its Prime
The 2017 Laurent Ponsot Beaune 1er Cru "Cuvée du Noyer" holds a historic position within the house’s lineup: it marks the debut vintage for Laurent Ponsot under his own label, launched immediately after he departed his family estate in early 2017. True to his innovative spirit, this wine is a masterfully balanced mosaic created by selecting and blending fruit from eight different Premier Cru vineyards across the slopes of Beaune.
The 2017 growing season in the Côte de Beaune was universally praised as a "classicist's dream." Following a hot, sunny summer, a cool and steady September allowed for perfect harvest dates. The grapes achieved optimal phenolic ripeness with remarkably low sugar levels, giving birth to wines defined by sheer elegance, lifted aromatics, and highly expressive terroir transparency.
🍷 Tasting Notes (2026 Perspective)
Now with nearly a decade of bottle age, the 2017 vintage has evolved beautifully past its primary stage, currently sitting in its peak drinking window and showing magnificent tertiary harmony.
-
The Nose: Lifted, Savory, and Earthy. It opens with an attractive, highly expressive bouquet of dried red raspberries, sour black cherries, and pomegranate. With a bit of air, its aged complexity steps forward, showing layers of damp forest floor, autumn mulch, savory wild spice, and crushed violets, completely untouched by any new oak aromas.
-
The Palate: Silky, Lithe, and Balanced. The mouthfeel is incredibly graceful and light-footed. The once-firm youthful structural edges have fully melted into soft, velvety, fine-grained tannins. Flavors of tart cranberry and wild strawberry are supported by a lovely, vibrant vein of natural acidity that keeps the mid-palate wonderfully fresh.
-
The Finish: Refined and Earthy. It closes with excellent persistence, leaving a long, savory trail of dried orange peel, white pepper, and a clean, chalky mineral dryness.

Pro Tip
Because the 2017 vintage has fully unlocked its earthy, savory forest-floor aromatics, it is an elite partner for dishes that emphasize umami, wild herbs, and delicate fats.
-
The Classic Match: A textbook match for roasted game birds. It pairs flawlessly alongside pan-seared squab, roasted quail, or duck breast served with a delicate mushroom or chanterelle reduction.
-
The Cheese Board: Exceptional with soft-ripened French cheeses with a bit of age, such as Cîteaux, Brillat-Savarin, or a mild, creamy Époisses.
-
The "Nordic" Match: This aged beauty is an absolute showstopper alongside Pan-seared Reindeer Loin (Poron sisäfilee) or roasted venison served with a light jus and wild porcini mushrooms. The wine’s subtle forest-floor undertones and silky tannins harmonize beautifully with the lean, clean textures of premium Nordic game.
