Applejack Vineyard Chardonnay is an iconic single‑vineyard wine from the cool‑climate Yarra Valley.
The name “Applejack” refers to the vineyard’s original apple and pear orchards. The area has a long history of fruit growing before wine production became established.
What makes Yarra Valley Chardonnay distinctive is the cool climate, which gives the grapes freshness and purity of flavour. The long growing season builds depth and layered aromatics. The elevation and soil of the Applejack Vineyard add a salty minerality that has become a hallmark of Giant Steps.
The wine is made from hand‑picked grapes that ferment with wild yeasts in small batches to preserve the pure character of the Applejack vineyard. It is matured in French oak barrels, only a small portion of which are new, adding subtle toastiness without overshadowing the fruit. The result is a mineral‑driven Chardonnay that clearly reflects its cool climate origins.
