The Aube Secret – Vinous Depth, Generous Red Fruit, and Pure Pinot Noir Character
The Champagne Michel Guilleminot Brut Rosé is a craft grower Champagne (Récoltant-Manipulant) originating from Channes, a village situated in the southern part of Champagne's Côte des Bar (Aube department). The Côte des Bar is famed for its Kimmeridgian limestone soils—similar to nearby Chablis—and warm microclimate, making it prime territory for powerful, expressive Pinot Noir.
Guilleminot’s winemaking focuses entirely on mono-varietal Pinot Noir expression. Crafted as a Rosé d'Assemblage (blending a small percentage of still Coteaux Champenois red wine into the base white Pinot Noir), this cuvée balances vibrant berry fruit with fine, driving acid structure and vinous weight.
🍷 Tasting Notes
-
The Nose: Generous, Fresh, and Aromatic. Opens with an alluring burst of fresh wild strawberries, ripe raspberries, and red currants, backed by subtle hints of pink grapefruit zest, crushed rose petals, and a touch of warm brioche.
-
The Palate: Vinous, Supple, and Vibrant. Beautifully textured on the entry with a fine, persistent mousse. The core offers juicy red cherry and red berry fruit weight, kept structured and energetic by a driving vein of limestone acidity that avoids any unwanted heavy sweetness.
-
The Finish: Clean, Crisp, and Dry. Concludes on a snappy, dry note, leaving a lingering trail of tart cranberry, subtle spice, and a fine mineral salinity that readies the palate for food.

Pro Tip
Given its 100% Pinot Noir base and vinous weight, Guilleminot Brut Rosé transitions effortlessly from a welcome aperitif to a high-performing food companion.
-
The Bistro Match: Superb alongside cured charcuterie, duck rillettes, roasted poultry with cranberry reductions, or mild creamy cheeses like Delice de Bourgogne or young Brie.
-
The Seafood Match: The red berry fruit and fine mousse pair brilliantly with pan-seared salmon, tuna carpaccio, or grilled prawns.
-
The "Nordic" Match: Outstanding when served chilled (8–10°C) with Cold-smoked Salmon (Kylmäsavulohi), Graavilohi, or Mäti toasts with smetana and red onion. The Pinot Noir fruit and bright citrus acidity cut straight through the cold-water fish oils while mirroring the sweet-savory pops of the roe.
