Guilleminot Champagne Brut Prestige

The Extended-Aged Flagship – Vinous Autolytic Depth, Toasted Brioche, and Aube Kimmeridgian Muscle
The Champagne Michel Guilleminot Cuvée Prestige Brut is the crown jewel of this grower house (Récoltant-Manipulant) based in Channes, at the southern edge of the Côte des Bar. While the house's standard Tradition bottling establishes their hallmark 100% Pinot Noir identity, the Cuvée Prestige takes the concept to a far higher level of autolytic refinement. By selecting old-vine parcels from prime Kimmeridgian slopes and submitting the wine to extended aging on its lees, Guilleminot transforms the natural, sun-ripened power of southern Champagne into an elegant, vinous, and complex experience.
🍷 Tasting Notes
-
The Nose: Complex, Expressive, and Autolytic. It leaps from the glass with a rich bouquet of baked Red Delicious apples, poached yellow pears, and dried fig, seamlessly intertwined with intense secondary notes of warm brioche, toasted hazelnuts, fresh butter, and honeyed pastry crust.
-
The Palate: Broad, Vinous, and Creamy. The entry is expansive, coating the palate with a silken mid-palate density driven purely by old-vine Pinot Noir fruit extract. A fine, incredibly integrated mousse gives way to a vibrant, underlying chalky mineral core that cuts straight through the richness, preventing any heavy edge and maintaining pristine balance.
-
The Finish: Long, Warm, and Savory. Concludes with outstanding length, leaving a persistent trail of lemon curd, roasted almond, baked red fruits, and a lingering, mouth-watering saline minerality.

Pro Tip
The extended maturation and 100% Pinot Noir backbone give the Prestige the weight and complexity of a still white Burgundy with bubbles, making it a stellar table companion beyond the welcome toast.
-
The Classic Match: Built for rich poultry and savory reductions. Magnificent alongside roast chicken with wild morels, pan-seared sweetbreads, or slow-cooked veal chops in cream sauce.
-
The Seafood Match: Powerful enough to handle bold seafood textures. Ideal with butter-basted lobster, roasted turbot, or scallops with hazelnut brown butter.
-
The "Nordic" Match: Outstanding when served slightly cellar-cooled (10–12°C) next to Butter-fried Pike-Perch (Kuha) with a creamy chanterelle sauce or a warm plate of Smoked Salmon (Savulohi) served with roasted root vegetables. The wine's rich brioche notes and driving limestone salinity match the savory, smoky fats effortlessly.
