The Winemaker’s Cider – Old Trees, Schist Soils, Real Depth

Eric Bordelet is widely regarded as the reference producer of French cider and perry. A former head sommelier at Alain Passard’s L’Arpège in Paris, he returned in 1992 to his family estate, Château de Hauteville in Charchigné, where Mayenne meets Normandy’s Domfrontais. His orchards – around 30 apple and 20 pear varieties, many from very old trees on granite and schist – are farmed biodynamically, picked by hand and fermented slowly with natural yeasts. The result: ciders and perries with the depth and finesse of fine wine.

Argelette is the local name for the schist soil the old apple trees grow on. Bordelet calls it his most “winey” cider: fruit from old trees and longer skin contact give it more structure, minerality and ageing potential than a typical cider – a true vintage cider.

🍎 Tasting Notes

Golden, with a fine, lively mousse. Baked apple, quince and a hint of salted caramel on the nose; the palate balances ripe fruit, crisp acidity and a chalky, mineral finish. Dry to off-dry in feel, layered and long.

🍽️ Food Pairing

Roast pork, chicken with cream sauce, buckwheat galettes, Normandy cheeses such as Camembert, Livarot and Pont-l’Évêque, and apple tarts.
