Eric Bordelet Sidre Nouvelle Vague 2025

The New Wave – Bone-Dry, Brisk and Bottled Small

Eric Bordelet is widely regarded as the reference producer of French cider and perry. A former head sommelier at Alain Passard’s L’Arpège in Paris, he returned in 1992 to his family estate, Château de Hauteville in Charchigné, where Mayenne meets Normandy’s Domfrontais. His orchards – around 30 apple and 20 pear varieties, many from very old trees on granite and schist – are farmed biodynamically, picked by hand and fermented slowly with natural yeasts. The result: ciders and perries with the depth and finesse of fine wine.

Nouvelle Vague is the most energetic, experimental cider in Bordelet’s range: fermented fully dry, slightly higher in alcohol than his classic ciders, and bottled in a handy 33 cl format – serious cider made for easy, everyday drinking.
