A Rare, Concentrated Dessert Perry

Eric Bordelet is widely regarded as the reference producer of French cider and perry. A former head sommelier at Alain Passard’s L’Arpège in Paris, he returned in 1992 to his family estate, Château de Hauteville in Charchigné, where Mayenne meets Normandy’s Domfrontais. His orchards – around 30 apple and 20 pear varieties, many from very old trees on granite and schist – are farmed biodynamically, picked by hand and fermented slowly with natural yeasts. The result: ciders and perries with the depth and finesse of fine wine.

Poire de Glace – “ice pear” – is Bordelet’s answer to ice cider: pear juice concentrated by cold before a long, slow fermentation, leaving a luscious natural sweetness balanced by bright acidity. Made in tiny quantities and bottled in 50 cl, it is one of the rarest wines in the range.

🍐 Tasting Notes

Deep gold. Candied pear, quince paste, honey and dried apricot, with notes of caramel and spice that have developed over ten years in bottle. Rich and sweet on the palate, yet kept lively by fresh acidity, with a long, glowing finish.

🍽️ Food Pairing

Foie gras, blue cheeses such as Roquefort, tarte Tatin, pear and almond desserts, crème brûlée – or on its own instead of dessert.
