Lightly Sparkling Cider-Apple Juice – Alcohol-Free
Eric Bordelet is widely regarded as the reference producer of French cider and perry. A former head sommelier at Alain Passard’s L’Arpège in Paris, he returned in 1992 to his family estate, Château de Hauteville in Charchigné, where Mayenne meets Normandy’s Domfrontais. His orchards – around 30 apple and 20 pear varieties, many from very old trees on granite and schist – are farmed biodynamically, picked by hand and fermented slowly with natural yeasts. The result: ciders and perries with the depth and finesse of fine wine.
This is the same biodynamic fruit that goes into Bordelet’s ciders – but bottled as unfermented juice with a gentle, natural sparkle (perlant). Cider apples bring far more character than dessert apples: a mix of sweetness, acidity and soft, bittersweet tannin that makes this juice feel more like a grown-up drink than a soft drink.
🍎 Tasting Notes
Hazy gold with a fine, light pearl. Fresh and baked apple, a touch of honey and a gently bittersweet, tannic grip from the cider apples; naturally sweet but balanced by bright acidity.
🍽️ Food Pairing
Brunch, crêpes and galettes, cheese boards, roast pork – and an excellent alcohol-free choice at the table for drivers and anyone skipping alcohol.
