Domaine Chantal Lescure is a family‑run estate known for its uncompromising craftsmanship and organic farming. The domaine converted to organic cultivation in the early 2000s and is now considered one of Beaune’s most respected producers. The name Les Chouacheux originates from old Burgundian dialect and refers to the stony, well‑draining soils of the vineyard.
The wine is 100% Pinot Noir, the classic grape of Beaune, known for producing refined wines with red‑berry aromas and gentle spice. The soil in Les Chouacheux is a mix of clay and limestone, giving the wine structure, minerality and a long finish. The vineyard’s hillside position provides excellent sunlight and drainage, allowing the grapes to ripen evenly while retaining their natural acidity.
The grapes are hand‑harvested from the Beaune Premier Cru vineyard, and fermentation takes place with natural yeasts to preserve the purity of the site’s character. Maceration is kept gentle to respect Pinot Noir’s delicate structure, and the wine ages for 12–16 months in French oak barrels, adding subtle spice and depth. The result is an elegant, balanced and long‑lived Beaune 1er Cru.
This Pinot Noir is an excellent choice with a variety of game birds, vegetable dishes and meat‑based meals. It pairs especially well with dishes such as seared duck breast, pissaladière (onion tart), mushroom risotto or grilled beef flank steak. At the same time, it is a highly versatile and adaptable red wine overall.
