Classic Left Bank Balance, Dark Fruit Integrity, and Earthy Elegance

(Seigneur de Noyers, Sublet de Dangu)

Baron François cuvée from Château Haut Moulin in the Médoc AOC. Named in honor of Baron François Sublet (Seigneur de Noyers, minister to King Louis XIII), this Left Bank bottling delivers a classical, terroir-focused Bordeaux profile centered around sandy gravel soils.

It represents a traditional Left Bank blend focused on structured Cabernet Sauvignon complemented by fleshier Merlot, resulting in a balanced, gastronomy-friendly red with moderate alcohol and fine structural grip.

🍷 Tasting Profile (Left Bank Classic)

  • The Nose: Classic, Earthy, and Dark-Fruited. Opens with aromas of crushed cassis, dark plum, and red cherries, underlaid with savory notes of cedar, tobacco leaf, dried herbs, and graphite pencil shavings.

  • The Palate: Medium-Bodied, Balanced, and Structured. Features a fresh entry with a solid core of dark berry fruit. Well-integrated, fine-grained tannins and bright gravelly acidity give the mid-palate clean alignment and drive.

  • The Finish: Dry, Savory, and Stony. Finishes clean with subtle trail notes of leather, dark cocoa, and lingering forest floor.

Pro Tip

Serve cellar-cooled at 16–18°C after a 30-minute decant to allow the fruit and savory graphite notes to unfold.

  • The Classic Bistro Pairing: Outstanding alongside grilled lamb chops, peppered steak, or roasted ribeye.

  • The Game Match: Pairs seamlessly with pan-roasted duck breast or wild boar ragù.

  • The "Nordic" Match: Superb alongside Slow-roasted Elk Fillet (Hirvipaisti) or Sautéed Reindeer (Poronkäristys) with a savory dark jus, wild chanterelles, and lingonberries. The wine's dark cassis acidity and fine tannin structure slice straight through the lean game fats without overpowering the delicate meat.
