The AWM (Austrian Wine Mafia) "Dolce und die Japaner" is an incredibly intriguing and experimental low-intervention project coming out of the Kamptal region in Austria. Stylistically, this wine balances perfectly on the fine line between crystalline classicism and vibrant, minimal-intervention natural winemaking.

Behind the playful name lies an impressive meeting of two completely different winemaking philosophies, combining some of Kamptal's top young talent:

  • Matthias Warnung: Renowned for his uncompromising natural wines, relying strictly on wild yeasts, skin-contact, and extended aging in large neutral oak.

  • Lorenz & Magdalena Haas-Allram (Weingut Allram): The next generation of a highly respected estate known for their technically precise, classic, high-end expressions of Kamptal terroir.


📋 Technical Snapshot & Vinification

Despite the name "Dolce und die Japaner" (Dolce and the Japanese), which might suggest some sweetness, this wine is bone-dry. The residual sugar is practically non-existent, often sitting around 0.1 g/l. The name is a tongue-in-cheek nod to an aromatic, exotic journey of grape varieties.

  • Grapes: Typically a blend of 70% Grüner Veltliner and 30% Müller-Thurgau.

  • Terroir: Calcareous loess and gravel soils in the Kamptal.

  • Method: The grapes undergo a short maischezeit (skin-contact/maceration), which imparts an exceptional texture and a subtle, fine-grained phenolic grip to the wine. It is fermented spontaneously with native yeasts in large, old wooden casks, bottled unfined and unfiltered, with only a minimal touch of sulfur at bottling.


🍷 Tasting Notes

This wine often benefits from a quick swirl or a few minutes of air, as it can display a faint, youthful reduction (a touch of gunflint or smoke) upon opening, which quickly clears to reveal deep fruit.

  • The Nose: Bright and Herbal. It leads with crunchy green apple, vineyard peach, and white pear. As it opens, the signature Grüner Veltliner traits kick in: white pepper, fresh thyme, and lemon peel, alongside an exotic floral lift from the Müller-Thurgau.

  • The Palate: Vibrant and Structured. Thanks to the skin-contact, the mouthfeel is incredibly tactile. It’s light on its feet but carries unexpected mid-palate weight, showing notes of preserved lemon, pineapple, and a touch of saltiness. The acidity is electric, making it an incredibly refreshing, mouth-watering bottle.

  • The Finish: Clean, persistent, and distinctly mineral, with a subtle herbal snap that invites another sip.

Thanks to its brilliant texture and laser-like acidity, this is a phenomenal gastronomy wine that bridges the gap between classic food pairings and experimental dishes.

  • Asian Cuisine: Living up to its name, this wine shines next to pure Asian flavor profiles. It is an exceptional match for Sushi, Sashimi, or lightweight Dim Sum.

  • The Sea: Fantastic with lean, fresh fish. Try it with Pan-seared Perch (Ahven) or Whitefish (Siika) finished with sea salt and a squeeze of lime.

  • The Cured Match: Its high acidity and subtle grip slice through fats beautifully, making it great for a plate of prosciutto, unpasteurized Alpine cheeses, or pickled summer vegetables.
